Ce distillat est vieilli en f\u00fbts pendant des p\u00e9riodes plus ou moins longues. La famille Quevedo a su pr\u00e9server l'esprit d'une tradition s\u00e9culaire, h\u00e9rit\u00e9e de ses ma\u00eetres rhumiers. Aujourd'hui, quatre g\u00e9n\u00e9rations plus tard, cet esprit est toujours vivant et constitue un symbole de qualit\u00e9 incontestable. La production de ce rhum passe par les processus suivants :<br \/>\n- <strong>Zafra ou r\u00e9colte de la canne \u00e0 sucre :<\/strong> \u00c0 partir du mois de mars, la canne \u00e0 sucre cultiv\u00e9e \u00e0 La Palma est r\u00e9colt\u00e9e \u00e0 la main par les agriculteurs locaux.<br \/>\n- <strong>Broyage<\/strong>La canne \u00e0 sucre est tri\u00e9e pour \u00eatre broy\u00e9e dans l'ordre d'arriv\u00e9e, ce qui permet de r\u00e9duire au minimum le temps \u00e9coul\u00e9 entre la coupe de la canne et l'extraction du jus ou \"guarapo\". Le r\u00e9sidu obtenu lors du broyage, la \"bagasse\", est r\u00e9cup\u00e9r\u00e9 par les r\u00e9coltants de la r\u00e9gion et utilis\u00e9 comme source d'engrais naturel pour l'agriculture locale, fermant ainsi le cycle des cultures.<br \/>\n- <strong>Fermentation<\/strong>Le jus ou \"Guarapo\" est ferment\u00e9 directement sans \u00eatre soumis \u00e0 aucun autre processus pr\u00e9alable d'extraction du sucre et sans utilisation d'additifs chimiques, ce qui permet de conserver intactes toutes ses propri\u00e9t\u00e9s naturelles. Le processus de fermentation est naturellement contr\u00f4l\u00e9 par l'ensemencement de levures indig\u00e8nes sous contr\u00f4le de temp\u00e9rature et peut durer environ 30 heures.<br \/>\n- <strong>Distillation<\/strong>Lors du processus de distillation, l'alcool est obtenu directement \u00e0 partir du guarapo, ce qui permet au rhum de conserver la saveur, l'ar\u00f4me et la bont\u00e9 de la canne \u00e0 sucre fra\u00eechement coup\u00e9e. Aujourd'hui, pr\u00e8s d'un si\u00e8cle plus tard, la distillation directe reste une m\u00e9thode essentielle dans l'\u00e9laboration du rhum, en utilisant l'alambic original de Don Manuel Quevedo. L'une des premi\u00e8res colonnes de distillation fabriqu\u00e9es en Europe par Egrott (France), qui est toujours utilis\u00e9e aujourd'hui, ann\u00e9e apr\u00e8s ann\u00e9e, pour la production de leurs spiritueux aromatiques.<br \/>\n- <strong>Maturation et m\u00e9lange<\/strong>Le processus de maturation exige beaucoup d'habilet\u00e9 et de patience. Les spiritueux sont vieillis dans des bois de ch\u00eane de diff\u00e9rentes origines afin d'obtenir des rhums complexes de la plus haute qualit\u00e9.<br \/>\n- <strong>Hydratation et repos :<\/strong> Tous les rhums sont hydrat\u00e9s avec de l'eau pure provenant des sources Marcos y Cordero, l'une des sources d'eau naturelle les plus importantes des \u00eeles Canaries.
