Madrid Fusion 2023

NO LIMITS, NO LIMITS

By our very nature we merge in some way with our surroundings when we eat. In most cultures, eating has a basically social function. A set of rules, often very strict, that give meaning and identity to each group is established around food.

Therefore, as a way of projecting the essence of La Palma to tourism, the "Saborea La Palma" project was born with the aim of promoting the economic, social and tourist development of the island through its gastronomy.

To this end, a series of actions and proposals are presented below, all of which have the gastronomy of La Palma as a common thread, not only in terms of catering, but also in terms of the origin of the product.

Kitchen equipment

For this edition of Madrid Fusión 2023, and the change of concept implemented by Saborea España, we intend to organise the actions to be carried out by this group as follows.

For this edition we will have the David A. Pérez Sánchez chef and owner of the restaurant Carmen located in El Paso and Carlos G. Díaz Rodríguez chef and owner of the restaurant El Canal in San Andrés y Sauces.

Tools to be provided by cooks: equipment for the preparation of the dishes, necessary products (take into account the sample products that are brought to the stand), decorative plate for the presentation of the tapa, Saborea Jacket.
