
27 Jan La Palma sets itself apart as a gastronomic destination at Madrid Fusión 2025
The Councillor for Economic Promotion of the Cabildo de La Palma and CEO of Sodepal, Miriam Perestelo, stresses the importance of attending this type of specialised event in order to continue making the island known as one of the destinations recognised for the quality of its products and the talent of its professionals.
La Palma is positioning itself as a gastronomic destination at Madrid Fusión 2025, to be held from 27th to 29th January at Ifema. The island will bring the best of its products and the talent of its professionals to this renowned international trade fair under the umbrella of the Saborea La Palma project, promoted by the public company Sodepal.
The Councillor for Economic Promotion of the Cabildo de La Palma and CEO of Sodepal, Miriam Perestelo, stresses the showcase that this international event represents to continue to bet on the differentiation of the destination through its gastronomy, "a sector that has been gaining more and more relevance, positioning itself as one of the main tourist attractions of the island," she explains.
For her part, the Councillor for Tourism, Raquel Rebollo, defends the fact that the island of La Palma arrives at Madrid Fusión after an initial contact with the tourism sector at Fitur, and now focuses on one of the island's star products, such as gastronomy, something that strengthens La Palma among a specific part of this area.
Saborea La Palma will have its own stand in the Saborea España area, where for three days it will be presenting its products, as well as typical dishes from La Palma's cuisine.
The Cabildo and the public company Sodepal continue to support and reinforce the presence of La Palma as a differentiated destination through this type of more specialised events that allow them to continue creating a brand through the different products offered by the destination, such as gastronomy, astro-tourism and sports tourism, among others.
Programme of actions at Madrid Fusión
Within the framework of the fair, the CEO of Sodepal, Miriam Perestelo, will hold a series of meetings with agents from the tourism and gastronomic sector that will enable synergies to be generated between the destination and other places to share experiences, as well as with companies and representatives from this field to position the island.
On the other hand, La Palma will have different presentations, from cooking with Palmero goat and Palmero beef, to workshops and tastings of a wide variety of products from the island, such as mojo, salt, oil, gofio, a selection of island pastries, fruit, and drinks such as coffee, rum and beer.
On Monday, 27th January, José Alberto Díaz and Brenda Rodríguez will present 'Destino La Palma', showing the quality of the island's cheeses from 12:15 p.m. onwards. In the afternoon, Emilio Rodríguez will present a workshop on cocktails in the 'Aula de Copas' at 16:30.
On Tuesday, 28 January, Jesús Álvarez will explain the characteristics of Palmeros wines at 12:30 pm. There will also be space for the Love Festival, a commitment to freedom and diversity, by César Pérez in the 'Showcooking' area, at 17:00. José Alberto Díaz will hold a workshop on avocados from La Palma, starting at 18:00. To close the day, Emilio Rodríguez will once again present and make cocktail products.
Finally, on Wednesday, 29 January, José Alberto Díaz will delight those present with the Palmero beef dog and goat's milk quesillo, while César Pérez will give a workshop on mojo palmero and traditional potatoes.
