Description: To feed his animals, Félix Alberto takes advantage of the abundant resources of the native palm tree flora. The 40 hectares of his grazing area abound with species typical of the coastal strip and characterised by their resistance to drought, such as vinegar trees and cornicales. To balance their diet, their owner provides them with supplements of cereals, legumes and other local fodder resources, such as tagasastes (Chamaecytisus proliferus var. palmensis) or heather branches.

The herd numbers about 250 animals, which are herded with the invaluable help of a Garaffian sheepdog. Pastoral activity is interrupted only between December and January, when efforts are concentrated on rebreeding. This voluntary break helps to comply with the natural biological cycles and ensures the future of the farm.

The cheeses of the Las Cuevas brand are made exclusively with their own freshly-milked milk. The process begins first thing in the morning and during the process the ancestral cheese-making techniques are faithfully maintained, as guaranteed by the quality manual of the Denomination of Origin. The production is diverse and ranges from small pieces of 1 to 2 kilos to large herd cheeses, which exceed eight kilograms. Similarly, Félix Alberto and his wife Lina choose the most suitable cheeses for the smoking stage, which they flavour with dried prickly pear cactus (Opuntia sp.) and almond shells.
